Pistachio Lush is a creamy layered dessert featuring a buttery walnut crust, sweetened cream cheese layer, smooth pistachio pudding, and fluffy whipped topping. This chilled, make-ahead treat is perfect for holidays, potlucks, and family gatherings.

- 1 cup all-purpose flour
- 1/2 cup (1 stick) unsalted butter, cut into pieces
- 1 cup chopped walnuts
- 8 oz cream cheese, softened to room temperature
- 1 cup powdered (confectioner’s) sugar
- 3 cups whipped topping, divided (1 cup for filling, 2 cups for topping)
- 2 packages (3.4 oz each) instant pistachio pudding mix
- 3 cups cold whole milk
- 1/2 cup toasted sliced almonds (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cut the 1/2 cup butter into the 1 cup flour using a pastry blender or two knives until the mixture resembles small peas.
- Stir in 1 cup chopped walnuts until evenly combined.
- Press the mixture firmly into the bottom of a 9×13-inch baking dish to form an even crust layer.
- Bake for 20 minutes or until lightly golden. Remove from oven and cool completely.
- In a mixing bowl, beat 8 oz softened cream cheese until smooth. Add 1 cup powdered sugar and mix until creamy.
- Fold in 1 cup whipped topping and spread evenly over the cooled crust.
- In another bowl, whisk 2 packages pistachio pudding mix with 3 cups cold milk for 1–2 minutes until it begins to thicken.
- Spread the pistachio pudding evenly over the cream cheese layer.
- Refrigerate for 2–3 hours, or until fully set.
- Before serving, spread the remaining 2 cups whipped topping over the pudding layer and sprinkle with 1/2 cup toasted almonds if desired.
- Slice into squares and serve chilled.
Notes
- Ensure the crust is completely cooled before adding the cream cheese layer to prevent melting.
- Use room temperature cream cheese for a smooth, lump-free filling.
- Chill for at least 3 hours or overnight for cleaner slices.
- For a no-bake version, substitute the crust with a graham cracker crust and refrigerate until firm.
- Store covered in the refrigerator for up to 3 days. Freezing is not recommended.
