Description

Pistachio Lush is a creamy layered dessert featuring a buttery walnut crust, sweetened cream cheese layer, smooth pistachio pudding, and fluffy whipped topping. This chilled, make-ahead treat is perfect for holidays, potlucks, and family gatherings.

  • 1 cup all-purpose flour
  • 1/2 cup (1 stick) unsalted butter, cut into pieces
  • 1 cup chopped walnuts
  • 8 oz cream cheese, softened to room temperature
  • 1 cup powdered (confectioner’s) sugar
  • 3 cups whipped topping, divided (1 cup for filling, 2 cups for topping)
  • 2 packages (3.4 oz each) instant pistachio pudding mix
  • 3 cups cold whole milk
  • 1/2 cup toasted sliced almonds (optional, for garnish)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cut the 1/2 cup butter into the 1 cup flour using a pastry blender or two knives until the mixture resembles small peas.
  3. Stir in 1 cup chopped walnuts until evenly combined.
  4. Press the mixture firmly into the bottom of a 9×13-inch baking dish to form an even crust layer.
  5. Bake for 20 minutes or until lightly golden. Remove from oven and cool completely.
  6. In a mixing bowl, beat 8 oz softened cream cheese until smooth. Add 1 cup powdered sugar and mix until creamy.
  7. Fold in 1 cup whipped topping and spread evenly over the cooled crust.
  8. In another bowl, whisk 2 packages pistachio pudding mix with 3 cups cold milk for 1–2 minutes until it begins to thicken.
  9. Spread the pistachio pudding evenly over the cream cheese layer.
  10. Refrigerate for 2–3 hours, or until fully set.
  11. Before serving, spread the remaining 2 cups whipped topping over the pudding layer and sprinkle with 1/2 cup toasted almonds if desired.
  12. Slice into squares and serve chilled.

Notes

  • Ensure the crust is completely cooled before adding the cream cheese layer to prevent melting.
  • Use room temperature cream cheese for a smooth, lump-free filling.
  • Chill for at least 3 hours or overnight for cleaner slices.
  • For a no-bake version, substitute the crust with a graham cracker crust and refrigerate until firm.
  • Store covered in the refrigerator for up to 3 days. Freezing is not recommended.
