The Plastic-Bag Roasted Turkey is a simple, juicy, and foolproof way to prepare your holiday bird. This method locks in flavor and moisture, making it perfect for beginners and seasoned cooks alike.

  • Total Time: ~3 hours 20 minutes
  • Yield: 812 servings (depending on turkey size) 1x

Ingredients

Scale
  • 1 whole, fully thawed turkey (1224 pounds)
  • 1 large oven-safe plastic bag
  • 2/3 cup softened butter
  • Salt and pepper, to taste
  • 2 tablespoons dried herbs (like thyme, rosemary, and sage)
  • 4 garlic cloves, minced
  • 1 white onion, roughly chopped
  • 3 celery stalks, roughly chopped
  • 2 carrots, roughly chopped
  • 1 tablespoon flour

Instructions

Step 1: Preheat the Oven

Set your oven to 350°F (175°C). Position the rack one level below the center for optimal airflow and even cooking.

Step 2: Prepare the Butter Mixture

In a bowl, combine the softened butter, minced garlic, salt, pepper, and dried herbs. This mixture will add rich flavor and moisture to your turkey.

Step 3: Prep the Turkey

  • Remove the neck and giblets from the turkey cavity.
  • Tuck the wings under the turkey or tie them back to prevent burning.
  • Generously rub the butter mixture over the entire turkey, ensuring every nook and cranny is coated.

Step 4: Prepare the Plastic Bag

  • Sprinkle 1 tablespoon of flour inside the plastic oven bag. This helps prevent the bag from bursting during cooking.
  • Add the chopped onion, carrots, and celery into the bag for extra flavor.

Step 5: Bag the Turkey

Carefully place the seasoned turkey inside the bag with the vegetables. Seal it tightly, then use a sharp knife or scissors to make a few small slits on top. These will allow steam to escape while locking in moisture.

Step 6: Roast

Place the bagged turkey into a large roasting pan. Cook according to the turkey’s weight:

  • 12–15 lbs: Roast for 2 to 2.5 hours
  • 15–20 lbs: Roast for 2.5 to 3 hours
  • 20–24 lbs: Roast for 3 to 3.5 hours

Use a meat thermometer to ensure the thickest part of the thigh reaches 165°F.

Step 7: Rest and Serve

Once cooked, let the turkey rest in the bag for about 20 minutes to allow the juices to settle. Carefully remove the bag, transfer the turkey to a serving platter, and carve it up for your hungry guests.

Notes

  • Double-check the bag: Ensure you’re using an oven-safe plastic bag. Regular plastic bags are a no-go!
  • Don’t skip the flour: It’s essential for preventing bag explosions.
  • Use a thermometer: This ensures the turkey is cooked to perfection without drying out.
  • Save the drippings: The juices collected in the bag make an incredible base for gravy.
