Instructions

  1. Remove the roast from the refrigerator and let it sit at room temperature for 3 hours.
  2. 30 minutes before cooking, preheat the oven to 500°F (260°C).
  3. Generously season the roast on all sides with kosher salt and cracked pepper.
  4. Use kitchen twine to tie the roast into a uniform shape.
  5. Place the roast fat-side up on a roasting rack set inside a pan.

  7. Place the roast in the oven and roast for the calculated time.
