Description

This Pumpkin Coffee Cake is a moist, flavorful fall treat made with pumpkin puree and warm spices. Topped with a brown sugar cinnamon streusel, it’s the perfect breakfast or snack for any occasion.

  • ½ cup brown sugar
  • ¼ cup milk
  • ¼ cup maple syrup
  • ¼ cup all-purpose flour (for the topping)
  • ¼ cup light brown sugar (for the topping)
  • 1 tablespoon cinnamon (for the topping)
  • 4 tablespoons cold butter (for the topping)
  • Optional: ½ cup chopped pecans or walnuts (for the topping)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 square baking dish with cooking spray or line it with parchment paper.
  2. In a large bowl, mix the flour, baking powder, salt, cinnamon, and pumpkin pie spice together.
  3. In a separate medium bowl, whisk together the pumpkin puree, brown sugar, oil, maple syrup, and milk until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. For the crumb topping, mix the flour, brown sugar, and cinnamon. Add the cold butter and mix with a fork or pastry cutter until the mixture forms coarse crumbs.
  7. Sprinkle the crumb topping over the batter.
  8. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out mostly clean.

Notes

  • For a gluten-free version, use a 1:1 gluten-free flour blend.
  • Substitute almond milk or oat milk for the dairy milk to make the cake dairy-free.
  • Store leftovers in an airtight container for up to 4-5 days or freeze for up to 2 months.
  • To make muffins, bake at 350°F for 20 minutes.
  • For a sweeter treat, drizzle a glaze of powdered sugar, milk, and vanilla extract on top after baking.
