Instructions
- Preheat oven to 375°F. Line a 10×15-inch jelly roll pan with parchment paper and spray with non-stick spray.
- In a large bowl, whisk eggs for 30 seconds. Add sugar, pumpkin puree, and vanilla extract, and whisk until smooth.
- In a separate bowl, combine flour, baking powder, pumpkin pie spice, and salt. Gradually add the dry ingredients to the wet ingredients and mix until smooth.
- Pour the batter into the prepared pan, spreading it evenly. Bake for 15 minutes or until a toothpick comes out clean. Remove from the oven and allow to cool slightly.
- Carefully, with the parchment paper attached, roll the hot cake starting from one short end. Let the cake cool completely on the counter.
- Once cooled, prepare the cream cheese filling by mixing cream cheese, butter, powdered sugar, and vanilla until smooth.
- Unroll the cooled cake, remove the parchment paper, and spread the cream cheese filling evenly on the inside.
- Carefully roll the cake back up, wrap it in plastic wrap, and refrigerate until chilled.
