Description

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in pumpkin puree, egg, and vanilla extract (add food coloring if using).
  4. In a separate bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually mix dry ingredients into wet mixture until just combined.
  6. Fold in chocolate chips, mini marshmallows, and graham cracker pieces gently.
  7. Drop rounded tablespoons of dough onto the baking sheet, spacing about 2 inches apart.
  8. Top each cookie dough ball with additional chocolate chips, marshmallows, and graham cracker crumbs.
  9. Bake for 12–14 minutes until edges are golden and centers are soft.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.
