Ingredients
Scale
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/4 cup milk
- 1/4 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 3 cups quick oats
- 1/2 cup white chocolate chips (optional)
Instructions
- Prepare the Mixture: In a medium saucepan, melt the butter over medium heat. Add the granulated sugar, brown sugar, milk, and pumpkin puree. Stir well to combine. Bring the mixture to a boil, and let it boil for 2 minutes, stirring constantly.
- Add Flavorings: Remove the saucepan from the heat. Stir in the vanilla extract, pumpkin pie spice, and salt until well combined.
- Add the Oats: Gradually add the quick oats to the mixture, stirring until the oats are fully coated with the pumpkin spice mixture. If using white chocolate chips, stir them in now.
- Form the Cookies: Line a baking sheet with parchment paper or a silicone baking mat. Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet, forming cookies.
- Cool the Cookies: Let the cookies cool at room temperature for at least 30 minutes, or until they are set and firm.
- Serve: Once the cookies are completely cooled and set, they are ready to enjoy. Store any leftovers in an airtight container at room temperature or in the refrigerator.
Notes
- Choose Your Oats Wisely: Quick oats work best for this recipe because they bind well and create a softer texture. Avoid using old-fashioned oats as they may make the cookies too chewy.
- Customize Your Cookies: If you’re not a fan of white chocolate chips, feel free to leave them out or substitute with dark chocolate chips, nuts, or even dried cranberries for a bit of tartness.
- Consistency Is Key: Make sure to boil the mixture for the full 2 minutes. This step helps ensure that the cookies will set properly and not turn out too soft or runny.
