Description

  • 2 teaspoons brown sugar
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon kosher salt
  • 1 ¼ cups buttermilk
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • ¼ cup unsalted butter, melted


Instructions

  1. Preheat oven to 200°F and preheat a waffle iron to medium-high heat. Lightly grease or spray the waffle iron.
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In a separate bowl or measuring cup, whisk together buttermilk, pumpkin puree, eggs, and melted butter until smooth.
  4. Pour the wet mixture over the dry ingredients. Stir gently with a rubber spatula just until combined. The batter should remain slightly lumpy.
  5. Pour about ½ cup of batter into the preheated waffle iron. Close and cook for 4–5 minutes, or until golden brown and crisp.
  6. Transfer cooked waffles to the oven to keep warm. Repeat with the remaining batter.
  7. Serve warm with maple syrup, whipped cream, or your favorite toppings.

Notes

  • Don’t overmix the batter to keep waffles tender and fluffy.
  • Let the batter rest for 5–10 minutes before cooking for better texture.
