Instructions

- In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until smooth.
- Gradually stir the dry ingredients into the wet mixture just until combined. Do not overmix. Fold in nuts if using.
- For the streusel, mix ½ cup flour, ¼ cup brown sugar, and 1 teaspoon cinnamon in a small bowl. Add cold butter cubes and mix until crumbly. Stir in rolled oats.
- Pour batter into prepared pan and sprinkle the streusel topping evenly over the batter.
- Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Cover loosely with foil if browning too fast.
