Description

Red Velvet Cheesecake Bites are a delightful combination of rich, tangy cream cheese and fluffy red velvet cake, offering a delicious, no-bake dessert. Perfect for parties, picnics, or a simple sweet treat, these bites are quick to make and easy to store for later enjoyment.

Ingredients

Scale
  • 1 box Red Velvet Cake Mix
  • 1 cup Milk (any type)
  • 1/2 cup Vegetable Oil
  • 1 large Egg (room temperature)
  • 8 oz Cream Cheese (full-fat)
  • 1/2 cup Butter (at room temperature)
  • 2 cups Powdered Sugar
  • 1/2 cup Crushed Graham Crackers
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare the red velvet cake mix according to the package instructions, then bake. Allow the cake to cool completely.
  2. Once the cake has cooled, crumble it into fine crumbs using your hands or a fork.
  3. In a large mixing bowl, beat together the cream cheese, butter, and powdered sugar until smooth and fluffy.
  4. Add the crushed graham crackers and vanilla extract to the cream cheese mixture, mixing until fully combined.
  5. Using a cookie scoop, scoop out small amounts of the cheesecake mixture and roll them into balls with your hands.
  6. Place the cheesecake balls on a lined baking sheet or large plate and refrigerate for about 1 hour to firm up.
  7. Once chilled, roll the cheesecake balls through the red velvet cake crumbs, ensuring all sides are coated. Reshape if necessary to make them rounder.
  8. Serve immediately or refrigerate until ready to enjoy.

Notes

  • If the cake is too moist, dry the cake crumbs out in the oven at 350°F for 5-6 minutes before using them to coat the cheesecake balls.
  • Feel free to adjust the sweetness by adding more powdered sugar, up to 2 cups for extra sweetness.
  • Chill the cheesecake bites for at least 1 hour to help them hold their shape when coated.
  • You can add nuts, chocolate chips, or sprinkles to the cake crumbs for extra texture and flavor.
