Ingredients

  • 1 1/2 cups fresh blueberries
  • 1 1/2 cups fresh strawberries, diced into 1/4-inch cubes


Instructions

  1. Cream the softened butter and granulated sugar together in a large bowl or stand mixer until light and fluffy, about 2 minutes.
  2. Add the egg and vanilla extract and beat until the mixture is smooth and fully combined.
  3. In a separate bowl, mix the flour, baking soda, baking powder, and salt. Gradually fold this into the butter mixture until a soft dough forms.
  4. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour or up to 3 days.
  5. Preheat the oven to 350°F and line two large sheet pans with parchment paper.
  6. Roll the chilled dough out on a floured surface to 1/4-inch thickness. Cut into 3-inch rounds and place 2 inches apart on the prepared pans.
  7. Bake for 10–12 minutes or until the edges are lightly golden. Let cool 10 minutes on the pan, then transfer to a wire rack to cool completely.
  8. Prepare the frosting by beating the cream cheese and softened butter together until smooth. Add powdered sugar, milk, and vanilla, and beat until creamy.
  9. Frost each cooled cookie and top with diced strawberries and blueberries.
  10. Refrigerate until ready to serve. Enjoy!
