Description

Rice Krispie Easter Eggs are colorful no-bake marshmallow cereal treats shaped into festive egg forms. Made with butter, mini marshmallows, crispy rice cereal, and pastel food coloring, these soft and chewy spring desserts are perfect for Easter baskets, holiday dessert tables, and fun family baking activities.


Ingredients

  • 15 tablespoons salted butter (divided into 5 batches of 3 tablespoons each)
  • 15 cups mini marshmallows (divided into 5 batches of 3 cups each)
  • 15 cups Rice Krispies cereal (divided into 5 batches of 3 cups each)
  • 3 drops pink gel food coloring (for yellow batch)
  • 4 drops pink gel food coloring (for pink batch)
  • 3 drops pink gel food coloring + 2 drops blue gel food coloring (for purple batch)
  • 4 drops yellow gel food coloring + 1 drop blue gel food coloring (for green batch)
  • 4 drops blue gel food coloring (for blue batch)


Instructions

  1. In a medium saucepan over low heat, melt 3 tablespoons of salted butter until fully liquefied.
  2. Add 3 cups of mini marshmallows to the melted butter and stir continuously until completely melted and smooth. Remove from heat immediately.
  3. Add the designated food coloring drops for your chosen color and stir until evenly combined.
  4. Fold in 3 cups of Rice Krispies cereal and mix gently until all cereal is fully coated with the marshmallow mixture.
  5. Allow the mixture to cool slightly until safe to handle but still pliable.
  6. Lightly butter your hands and scoop approximately 1/2 cup (about 2 ounces) of mixture, shaping it into an egg form.
  7. Place shaped eggs on parchment paper and allow them to cool completely at room temperature.
  8. Repeat steps 1–7 for each remaining color batch until all five colors are completed.

Notes

  • Do not overheat the marshmallows or the treats may become hard.
  • Add food coloring before adding cereal for the most vibrant color.
  • Lightly butter hands to prevent sticking while shaping.
  • Store in an airtight container at room temperature for up to 4 days.
  • Freeze in a sealed container for up to 3 months and thaw at room temperature before serving.
