Description

Roasted Baby Carrots are sweet, tender, and caramelized in the oven with honey, brown sugar, cinnamon, butter, and oil. This easy side dish comes together in about 30 minutes and works beautifully for holiday dinners or simple weeknight meals.


Ingredients

  • 1 pound baby carrots, rinsed and dried
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons avocado oil
  • 2 tablespoons butter, melted
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly cracked black pepper, for garnish (optional)
  • 1 tablespoon chopped fresh parsley, for garnish (optional)


Instructions

  1. Preheat the oven to 425°F (220°C). Lightly coat a 9×13-inch baking dish with non-stick cooking spray or a little oil.
  2. In a large mixing bowl, whisk together the brown sugar, cinnamon, avocado oil, melted butter, honey, and salt until smooth.
  3. Add the baby carrots to the bowl and toss well until all of the carrots are evenly coated in the glaze.
  4. Transfer the coated carrots to the prepared baking dish and spread them into a single layer for even roasting.
  5. Bake for 20 minutes, turning the carrots halfway through cooking so they caramelize evenly.
  6. Check the carrots for tenderness with a fork. If needed, continue baking in 5-minute increments until they reach your desired texture.
  7. Remove from the oven, then garnish with black pepper and chopped parsley if desired. Serve warm.

Notes

  • Whole carrots can be used instead of baby carrots; peel and cut them into similar-sized pieces for even cooking.
  • If using larger carrot pieces, add extra baking time in 5-minute increments until tender.
  • Olive oil can be substituted for avocado oil.
  • For better caramelization, make sure the carrots are dry before tossing with the glaze.
  • Store leftovers in an airtight container in the refrigerator for 3 to 4 days.
  • Reheat in a skillet over medium heat for 3 to 5 minutes, or in a 375°F oven for about 10 minutes.
