Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel away the outer layers of a whole garlic head, keeping the cloves intact. Slice off the top of the bulb to expose the cloves.
  3. Place the garlic on a sheet of aluminum foil, drizzle with olive oil, and wrap tightly.
  4. Roast in the oven for 30–40 minutes until the cloves are soft and golden brown. Let cool slightly.
  5. Squeeze the roasted garlic cloves into a small bowl and mash into a smooth paste.
  6. In another bowl, mix the mashed garlic with mayonnaise, lemon juice, and Dijon mustard.
  7. Season with salt and pepper to taste, adjusting to your preference.
  8. Chill the aioli for at least 30 minutes to let the flavors meld.
