  • 1 cup Unsalted Butter (softened)
  • 1 cup Light Brown Sugar
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 2 1/2 cups Unbleached All-Purpose Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 cup Caramel Pieces
  • 1 cup Toffee Pieces
  • 1/2 tsp Sea Salt (optional, for sprinkling)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, soften the butter in the microwave for 20 seconds (do not melt).
  3. Cream the softened butter with the brown sugar until smooth and fluffy.
  4. Add the egg and vanilla extract to the butter-sugar mixture and mix well.
  5. Stir in the dry ingredients: flour, baking powder, baking soda, and salt.
  6. Add 1/4 cup of caramel pieces and 1/4 cup of toffee pieces to the dough, saving the rest for garnishing.
  7. Using a cookie scoop (about 2 tablespoons), drop the dough onto the prepared baking sheet. There’s no need to roll the dough into balls.
  8. Bake for 10–11 minutes or until the edges are golden brown.
  9. Remove the cookies from the oven and immediately use a mason jar lid or cookie cutter to shape them into perfect circles.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
  11. While the cookies are cooling, melt the remaining caramel in the microwave. Drizzle the melted caramel over the cookies and top with the remaining toffee pieces and a sprinkle of sea salt.

Notes

  • Shape the cookies with a mason jar lid or cookie cutter for uniform circles.
  • Store cookies in an airtight container for up to a week.
  • Freeze dough balls for later baking. Just add a couple of extra minutes to the baking time when baking from frozen.
