- 1 cup Light Brown Sugar
- 1 large Egg

- 1 cup Caramel Pieces
- 1 cup Toffee Pieces

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, soften the butter in the microwave for 20 seconds (do not melt).
- Cream the softened butter with the brown sugar until smooth and fluffy.
- Add the egg and vanilla extract to the butter-sugar mixture and mix well.
- Stir in the dry ingredients: flour, baking powder, baking soda, and salt.
- Add 1/4 cup of caramel pieces and 1/4 cup of toffee pieces to the dough, saving the rest for garnishing.
- Using a cookie scoop (about 2 tablespoons), drop the dough onto the prepared baking sheet. There’s no need to roll the dough into balls.
- Bake for 10–11 minutes or until the edges are golden brown.
- Remove the cookies from the oven and immediately use a mason jar lid or cookie cutter to shape them into perfect circles.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
- While the cookies are cooling, melt the remaining caramel in the microwave. Drizzle the melted caramel over the cookies and top with the remaining toffee pieces and a sprinkle of sea salt.
Notes
- Shape the cookies with a mason jar lid or cookie cutter for uniform circles.
- Store cookies in an airtight container for up to a week.
- Freeze dough balls for later baking. Just add a couple of extra minutes to the baking time when baking from frozen.
