Description
These sausage, egg, and cheese breakfast tots are easy-to-make, bite-sized breakfast cups made with crispy tater tots, savory sausage, fluffy scrambled eggs, and melted cheddar cheese—perfect for brunch or meal prep.

- 48 frozen tater tots
- 6 large eggs
- 8 oz ground sausage
- 4 oz cream cheese
- 4 oz shredded cheddar cheese
Instructions
- Preheat oven to 425°F. Cook ground sausage in a skillet over medium-high heat, breaking it up as it browns. Drain grease, then return sausage to skillet with cream cheese and stir until melted and combined. Set aside.
- Crack and whisk the eggs, then scramble them in a separate skillet until just set. Remove from heat and set aside.
- Grease a mini muffin pan and place three tater tots in each cup. Bake for 10 minutes to soften.
- Remove from oven and press down the tots with a tamper or spoon to form a cup shape.
- Fill each tot cup with about 1 teaspoon of scrambled eggs and 1 teaspoon of the sausage mixture.
- Return the pan to the oven and bake for 15 more minutes until the tots are golden and crispy.
- Sprinkle cheddar cheese on top of each cup and bake an additional 2–3 minutes until cheese is melted.
- Let cool for 5 minutes before removing from the muffin tin. Serve warm.
Notes
- Make sure to grease the muffin tin well to prevent sticking.
- Use a small glass or spice jar bottom if you don’t have a tamper.
- Freeze leftovers and reheat in an oven or air fryer for best texture.
- You can substitute tater tots with hash browns or sweet potato tots.
