Sausage Pancake Bites are the perfect combination of savory sausage and fluffy pancakes, making them a great option for busy mornings or meal prepping. These mini bites are easy to prepare and can be made ahead of time for a convenient and delicious breakfast or snack.

- 2 cups of Hungry Jack Pancake Mix
- 1 1/2 cups of water
- 12 fully cooked breakfast sausage links
- 1 cup shredded cheddar cheese
- 1/4 cup maple syrup
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix together the pancake mix and water according to the package instructions.
- Stir in shredded cheddar cheese and maple syrup into the pancake batter.
- Cut each sausage link into 4 small pieces.
- Fill mini muffin pans halfway with the pancake batter. Make sure not to overfill them.
- Place one piece of sausage in the center of each muffin cup.
- Bake the Sausage Pancake Bites at 400°F for 12-15 minutes or until golden and cooked through.
- Let the bites cool for a few minutes before removing them from the pans.
- Serve with extra maple syrup for dipping, or enjoy them as is!
Notes
- For easy removal, use a silicone mini muffin pan or coat a regular muffin pan with cooking spray.
- If using frozen sausage, microwave or brown them in a skillet before cutting them into pieces.
- Reheat the Sausage Pancake Bites in a microwave or air fryer for best results.
