Instructions
- Cook the Sausage: In a large pot, heat the olive oil over medium heat. Add the sliced turkey sausage and cook until browned and slightly crispy on the edges. Remove from the pot and set aside for later.
- Sauté the Aromatics: Using the same pot, sauté the chopped onion and minced garlic until the onion turns translucent, about 3-4 minutes. Stir occasionally to prevent sticking.
- Add the Potatoes: Toss in the diced potatoes, then season with dried thyme, salt, and pepper. Cook for 5 minutes, stirring to coat the potatoes evenly with the aromatics.
- Add the Broth and Simmer: Pour in the chicken broth and water. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for 15 minutes, or until the potatoes are soft and tender.
- Add Beans and Spinach: Gently stir in the drained white beans and fresh spinach. Continue to cook for about 5 minutes, until the spinach wilts beautifully.
- Return the Sausage to the Pot: Return the cooked sausage to the soup and simmer for another 5 minutes, allowing all the flavors to meld together.
- Serve and Enjoy: Ladle the soup into bowls, serve it hot, and pair it with a slice of crusty bread for a complete meal.
