Description

These easy sheet pan nachos are the ultimate beginner-friendly dinner or party snack, made in under 30 minutes with hearty toppings and loads of melty cheese.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 2 cloves garlic, minced
  • 1 (1.25-ounce) packet taco seasoning
  • 12 ounces tortilla chips
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup corn kernels (frozen, canned, or roasted)
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 1 Roma tomato, diced
  • ¼ cup diced red onion
  • 1 jalapeño, thinly sliced
  • 2 tablespoons sour cream
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat the Oven: Set your oven to 400°F. Lightly grease a baking sheet with olive oil or line it with parchment paper to prevent sticking and simplify cleanup.
  2. Cook the Meat: In a skillet over medium-high heat, warm the olive oil. Add the ground beef and garlic, breaking it up with a spoon as it browns. Stir in the taco seasoning and mix thoroughly. Once the meat is browned and cooked through, drain any excess fat to avoid greasy nachos.
  3. Layer the Base: Arrange the tortilla chips in a single layer across the prepared baking sheet. Make sure they don’t overlap too much to help every chip get topped evenly.
  4. Add the Toppings: Spoon the cooked beef mixture evenly over the chips. Scatter the black beans and corn across the top, then cover everything with both types of shredded cheese.
  5. Bake to Perfection: Place the sheet pan in the oven and bake for 5 to 7 minutes, or until the cheese is fully melted and slightly golden. Watch closely to prevent overbaking.
  6. Finish and Serve: Once out of the oven, top the nachos with diced tomato, chopped red onion, jalapeño slices, sour cream, and fresh cilantro. Serve immediately for the best texture.

Notes

  • To make this dish vegetarian, simply skip the meat and double the beans or add sautéed mushrooms. Feel free to get creative with toppings like avocado, salsa, or pickled onions. For spice lovers, a drizzle of hot sauce adds the perfect kick. If you’re feeding a crowd, set up a topping bar so everyone can personalize their portion.
