- 1 bunch asparagus (about 12 oz / 340 g), trimmed and cut into 2-inch pieces
- 1/2 cup (50 g) grated Parmesan cheese
- 2 large eggs
- 1/4 cup (60 ml) heavy cream
- 4 cloves garlic, minced
- 2 tablespoons (30 ml) olive oil
- 1/2 teaspoon salt, or to taste
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons (8 g) fresh parsley, chopped for garnish
- 1/2 cup (120 ml) reserved pasta cooking water
Instructions
- Bring a large pot of salted water to a boil. Cook 8 oz fettuccine according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta.
- Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the shrimp and cook for 2–3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the asparagus pieces and cook for 3–4 minutes until tender but still crisp.
- In a mixing bowl, whisk together 2 eggs, 1/2 cup grated Parmesan cheese, and 1/4 cup heavy cream until smooth.
- Reduce the skillet heat to low and add the cooked fettuccine to the pan with the asparagus.
- Slowly pour the egg and Parmesan mixture over the pasta while tossing quickly to coat the noodles. The residual heat will cook the eggs and form a creamy sauce.
- Add small amounts of the reserved pasta water if needed to loosen the sauce and create a silky consistency.
- Return the cooked shrimp to the skillet and toss everything together until evenly combined and warmed through.
- Season with salt and freshly ground black pepper to taste, then garnish with chopped parsley before serving.
