Description

Shrimp Asparagus Carbonara is a creamy Italian-inspired pasta dish made with tender shrimp, crisp asparagus, fettuccine, eggs, Parmesan cheese, and garlic.   • 8 oz (225 g) fettuccine pasta
  • 1 lb (450 g) large shrimp, peeled and deveined
  • 1 bunch asparagus (about 12 oz / 340 g), trimmed and cut into 2-inch pieces
  • 1/2 cup (50 g) grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup (60 ml) heavy cream
  • 4 cloves garlic, minced
  • 2 tablespoons (30 ml) olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons (8 g) fresh parsley, chopped for garnish
  • 1/2 cup (120 ml) reserved pasta cooking water


Instructions

  1. Bring a large pot of salted water to a boil. Cook 8 oz fettuccine according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta.
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the shrimp and cook for 2–3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the asparagus pieces and cook for 3–4 minutes until tender but still crisp.
  5. In a mixing bowl, whisk together 2 eggs, 1/2 cup grated Parmesan cheese, and 1/4 cup heavy cream until smooth.
  6. Reduce the skillet heat to low and add the cooked fettuccine to the pan with the asparagus.
  7. Slowly pour the egg and Parmesan mixture over the pasta while tossing quickly to coat the noodles. The residual heat will cook the eggs and form a creamy sauce.
  8. Add small amounts of the reserved pasta water if needed to loosen the sauce and create a silky consistency.
  9. Return the cooked shrimp to the skillet and toss everything together until evenly combined and warmed through.
  10. Season with salt and freshly ground black pepper to taste, then garnish with chopped parsley before serving.
