  • 1 tablespoon lime juice
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (optional)
  • Chopped fresh cilantro, for garnish
  • Chopped peanuts, for garnish
  • Cooked rice or rice noodles, for serving

Instructions

  1. Prepare the Sauce: Whisk together coconut milk, peanut butter, soy sauce, honey, rice wine vinegar, ginger, garlic, and crushed red pepper flakes until smooth.
  2. Arrange the Chicken: Place chicken in the slow cooker, pouring sauce evenly over each piece, ensuring they’re well-coated.
  3. Cook Slowly: Cover and cook on low for 4-5 hours until chicken is very tender and easily shreds apart with a fork.
  4. Shred Chicken: Remove chicken, shred with two forks, and mix back into the sauce in the slow cooker.
  5. Thicken Sauce (Optional): If you prefer a thicker sauce, stir the cornstarch mixture and lime juice into the slow cooker, cooking on high for 20-30 minutes until desired thickness is achieved.
  6. Serve: Serve hot over rice or noodles, garnished with chopped cilantro and peanuts.
