- 1 13.5 oz package of andouille sausage, sliced into 1/4-inch rounds
- 4 russet potatoes, peeled and cut into bite-sized pieces
- 1 cup diced bell pepper (red or green)
- 1 cup diced onion
- 1/2 cup diced celery
- 1/2 cup sliced carrots
- 1 tablespoon minced garlic
- 1 tablespoon Cajun seasoning
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 cups chicken broth
- 1 cup milk (whole milk preferred)
- 1/2 cup whipping cream
- 1 cup shredded cheddar cheese
- Green onions (for garnish)
- Tabasco sauce (optional, for garnish)
Instructions
- Heat the olive oil in a pan over medium heat and brown the andouille sausage on both sides. Remove and set aside.
- Place the sausage, potatoes, bell pepper, onion, celery, carrots, garlic, Cajun seasoning, salt, and pepper into the slow cooker.
- Pour the chicken broth over the ingredients and stir to combine.
- Cover the slow cooker and cook on high for 3 hours or on low for 5 hours.
- Stir in the milk and continue cooking for another hour.
- Add the whipping cream and shredded cheddar cheese. Cook until the cheese is melted, about 15 minutes.
- Serve with a garnish of sliced green onions and a dash of Tabasco sauce for added heat (optional).
Notes
- Browning the sausage beforehand enhances the flavor, but it’s not essential. If short on time, you can add it raw to the slow cooker.
- For a lighter version, substitute some of the chicken broth with low-fat milk.
- For an extra creamy soup, substitute the whipping cream with heavy cream or add cream cheese when adding the milk.
- Adjust the level of spice by adding more or less Cajun seasoning to suit your preference.
