Description

Slow Cooker Cajun Potato Soup is a creamy, smoky, and flavorful dish made with tender potatoes, andouille sausage, and a spicy Cajun kick.   • 1 tablespoon olive oil
  • 1 13.5 oz package of andouille sausage, sliced into 1/4-inch rounds
  • 4 russet potatoes, peeled and cut into bite-sized pieces
  • 1 cup diced bell pepper (red or green)
  • 1 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup sliced carrots
  • 1 tablespoon minced garlic
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 cups chicken broth
  • 1 cup milk (whole milk preferred)
  • 1/2 cup whipping cream
  • 1 cup shredded cheddar cheese
  • Green onions (for garnish)
  • Tabasco sauce (optional, for garnish)


Instructions

  1. Heat the olive oil in a pan over medium heat and brown the andouille sausage on both sides. Remove and set aside.
  2. Place the sausage, potatoes, bell pepper, onion, celery, carrots, garlic, Cajun seasoning, salt, and pepper into the slow cooker.
  3. Pour the chicken broth over the ingredients and stir to combine.
  4. Cover the slow cooker and cook on high for 3 hours or on low for 5 hours.
  5. Stir in the milk and continue cooking for another hour.
  6. Add the whipping cream and shredded cheddar cheese. Cook until the cheese is melted, about 15 minutes.
  7. Serve with a garnish of sliced green onions and a dash of Tabasco sauce for added heat (optional).

Notes

  • Browning the sausage beforehand enhances the flavor, but it’s not essential. If short on time, you can add it raw to the slow cooker.
  • For a lighter version, substitute some of the chicken broth with low-fat milk.
  • For an extra creamy soup, substitute the whipping cream with heavy cream or add cream cheese when adding the milk.
  • Adjust the level of spice by adding more or less Cajun seasoning to suit your preference.
  • Feel free to experiment with additional veggies like corn or spinach in the last hour of cooking.
