  • 1 small onion, diced
  • 1 cup sun-dried tomatoes, chopped (not in oil)
  • ½ cup chicken broth (low sodium)
  • 1 cup heavy cream
  • 1 cup fresh spinach, roughly chopped
  • 1 cup orzo pasta
  • 1 cup Parmesan cheese

Instructions

  1. Season the chicken breasts with Italian seasoning, red pepper flakes, salt, and pepper.
  2. Place the seasoned chicken in the slow cooker, and layer the minced garlic, diced onion, and sun-dried tomatoes on top.
  3. Pour the chicken broth over the chicken and vegetables, covering them completely.
  4. Cover the slow cooker and cook on low for 2-3 hours or on high for 1-1.5 hours, until the chicken is cooked through and tender.
  5. Once the chicken is nearly done, add the heavy cream and orzo pasta. Stir well and cook for an additional 20-30 minutes on low until the orzo is tender.
  6. Stir in the fresh spinach and grated Parmesan cheese until the spinach wilts and the cheese melts into the sauce.
