Instructions
- Melt the butter and olive oil in a large skillet over medium heat. Add the thinly sliced onions and cook for 10–15 minutes, stirring occasionally, until softened.
- Sprinkle the sugar over the onions and continue cooking for another 10–15 minutes, stirring frequently, until the onions become deeply golden and caramelized.
- Sprinkle the flour over the onions and cook for 2 minutes, stirring constantly to remove the raw flour taste.
- Transfer the caramelized onion mixture to the slow cooker.
- Pour in the beef broth and dry white wine. Add the thyme sprigs, bay leaves, salt, and black pepper. Stir to combine.
- Cover and cook on low for 6–8 hours to allow the flavors to fully develop.
- Preheat the oven broiler. Ladle the hot soup into oven-safe bowls.
- Top each bowl with a slice of baguette and sprinkle generously with shredded Gruyère cheese.
- Place the bowls under the broiler for 2–3 minutes, or until the cheese is melted, bubbly, and golden brown. Serve immediately.
