Instructions

  1. Melt the butter and olive oil in a large skillet over medium heat. Add the thinly sliced onions and cook for 10–15 minutes, stirring occasionally, until softened.
  2. Sprinkle the sugar over the onions and continue cooking for another 10–15 minutes, stirring frequently, until the onions become deeply golden and caramelized.
  3. Sprinkle the flour over the onions and cook for 2 minutes, stirring constantly to remove the raw flour taste.
  4. Transfer the caramelized onion mixture to the slow cooker.
  5. Pour in the beef broth and dry white wine. Add the thyme sprigs, bay leaves, salt, and black pepper. Stir to combine.
  6. Cover and cook on low for 6–8 hours to allow the flavors to fully develop.
  7. Preheat the oven broiler. Ladle the hot soup into oven-safe bowls.
  8. Top each bowl with a slice of baguette and sprinkle generously with shredded Gruyère cheese.
  9. Place the bowls under the broiler for 2–3 minutes, or until the cheese is melted, bubbly, and golden brown. Serve immediately.
