  • 3 pounds boneless, skinless chicken breasts
  • 1 cup chopped onion
  • 2 tablespoons butter

  • 2 cups pineapple juice
  • 1/2 cup brown sugar
  • 3/4 cup ketchup
  • 1 tablespoon soy sauce
  • 4 cloves garlic, minced
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground ginger


Instructions

  1. In a large bowl, whisk together pineapple juice, brown sugar, ketchup, soy sauce, garlic, Worcestershire sauce, and spices. Set aside.
  2. In a skillet, melt butter over medium-high heat. Add chopped onion and sauté until it begins to brown.
  3. Stir in flour and cook for one minute, then pour in the pineapple juice mixture. Bring to a boil, stirring constantly, and simmer for 10-15 minutes until the sauce thickens.
  4. Place chicken breasts in the slow cooker and pour the sauce over them. Cook on low for 8 hours.
  5. After cooking, shred the chicken using two forks and mix it with the sauce. If the sauce is too thin, leave the lid slightly open for a few minutes to reduce the liquid.
  6. Serve the chicken on sandwich rolls, over rice, or on top of salads.

Notes

  • For a richer flavor, substitute chicken thighs for the breasts.
  • To make the recipe gluten-free, replace flour with cornstarch.
  • For extra sweetness, add fresh pineapple chunks or bell peppers to the slow cooker.
