  • 34 boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 1 packet (1 oz) au jus gravy mix
  • 1 packet (1 oz) ranch dressing mix
  • 810 whole pepperoncini peppers
  • ¾ cup pepperoncini juice
  • ½ cup unsalted butter, sliced

Instructions

  1. Prepare the Slow Cooker: Lightly spray the inside of the slow cooker with non-stick spray or use a slow cooker liner for easy cleanup.
  2. Layer the Ingredients: Spread the diced onions evenly at the bottom of the slow cooker. Place the chicken breasts on top, ensuring they are not overlapping too much.
  3. Season the Chicken: Evenly sprinkle the au jus mix and ranch seasoning over the chicken. Do not mix—this will allow the flavors to slowly meld into the chicken as it cooks.
  4. Add the Butter and Peppers: Slice the butter into small pads and scatter them over the chicken. Place the whole pepperoncini peppers around and on top of the chicken.
  5. Pour the Pepperoncini Juice: Slowly drizzle the pepperoncini juice over the entire mixture, allowing it to seep through the layers and add moisture and tangy flavor.
  6. Cook Low and Slow: Cover with a lid and set the slow cooker to low for 6–7 hours or high for 4–5 hours. Avoid opening the lid frequently, as this releases heat and extends cooking time.
  7. Serve or Shred: Use two forks to shred the chicken directly in the slow cooker, mixing it with the flavorful juices. If serving whole, carefully remove the chicken breasts and spoon the sauce over them.

Notes

  • For a less tangy flavor: Reduce the amount of pepperoncini juice and replace part of it with chicken broth.
  • To make it creamy: Stir in a few tablespoons of cream cheese or a splash of heavy cream before serving.
  • For a one-pot meal: Add baby potatoes and sliced carrots to the slow cooker for a complete dish.
