Description

  • 3 pounds sirloin steak, cut into bite-sized pieces
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 small sweet onion, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 1 cup unsalted beef stock or broth
  • 1 ounce au jus gravy mix (1 packet)
  • 4 tablespoons unsalted butter, thinly sliced
  • Fresh chopped parsley, for garnish (optional)

Instructions

  1. Season the steak: In a large bowl, toss the steak bites with salt and pepper to evenly coat them with seasoning.
  2. Sear the beef: Heat half of the olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer and sear on all sides until browned. Cook in batches if necessary, adding more oil as needed.
  3. Transfer to the slow cooker: Once all the steak is seared, place it into a slow cooker. Add the sliced onions and garlic on top of the meat.
  4. Add the liquid and seasonings: Pour the beef stock over the steak bites, then sprinkle the au jus gravy mix evenly across the top. Place the slices of butter over everything.
  5. Slow cook to perfection: Cover the slow cooker and cook on LOW for 6–8 hours or on HIGH for 3–4 hours. Stir occasionally if possible to ensure even cooking.
  6. Garnish and serve: Once the steak bites are tender, give everything a final stir. Serve hot over mashed potatoes, egg noodles, or rice, and garnish with fresh parsley if desired.

Notes

  • For a deeper, richer sauce, add a splash of Worcestershire sauce or a teaspoon of Dijon mustard.
  • If you prefer a spicy kick, sprinkle in red pepper flakes or a dash of cayenne pepper.
  • For a thicker gravy, mix a cornstarch slurry (1 tablespoon cornstarch + 1 tablespoon water) into the slow cooker during the last 30 minutes of cooking.
