Ingredients
Scale
- 3 pounds sirloin steak, cut into bite-sized pieces
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 small sweet onion, thinly sliced
- 3 cloves garlic, thinly sliced
- 1 cup unsalted beef stock or broth
- 1 ounce au jus gravy mix (1 packet)
- 4 tablespoons unsalted butter, thinly sliced
- Fresh chopped parsley, for garnish (optional)
Instructions
- Season the steak: In a large bowl, toss the steak bites with salt and pepper to evenly coat them with seasoning.
- Sear the beef: Heat half of the olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer and sear on all sides until browned. Cook in batches if necessary, adding more oil as needed.
- Transfer to the slow cooker: Once all the steak is seared, place it into a slow cooker. Add the sliced onions and garlic on top of the meat.
- Add the liquid and seasonings: Pour the beef stock over the steak bites, then sprinkle the au jus gravy mix evenly across the top. Place the slices of butter over everything.
- Slow cook to perfection: Cover the slow cooker and cook on LOW for 6–8 hours or on HIGH for 3–4 hours. Stir occasionally if possible to ensure even cooking.
- Garnish and serve: Once the steak bites are tender, give everything a final stir. Serve hot over mashed potatoes, egg noodles, or rice, and garnish with fresh parsley if desired.
Notes
- For a deeper, richer sauce, add a splash of Worcestershire sauce or a teaspoon of Dijon mustard.
- If you prefer a spicy kick, sprinkle in red pepper flakes or a dash of cayenne pepper.
- For a thicker gravy, mix a cornstarch slurry (1 tablespoon cornstarch + 1 tablespoon water) into the slow cooker during the last 30 minutes of cooking.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
