- 1/2 cup honey
- 3/4 cup soy sauce (regular or low-sodium)
- 2 tablespoons rice vinegar
- 1/4 cup mirin
- 1/2 teaspoon powdered ginger
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon freshly ground black pepper
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
- 1 tablespoon cool water
Instructions
- Grease the inside of your slow cooker to prevent sticking and ease cleanup.
- Add soy sauce, honey, rice vinegar, mirin, garlic powder, onion powder, ground ginger, black pepper, and sesame oil into the slow cooker and whisk to combine.
- Place the chicken breasts into the sauce and turn to coat. Cover and cook on low for 6 hours or high for 3 hours until the chicken is fork-tender.
- Remove the chicken and shred it with two forks or use a stand mixer with a paddle attachment.
- Strain the remaining sauce through a fine mesh strainer into a saucepan. Mix cornstarch and water, then stir into the sauce.
- Bring the sauce to a boil over medium-high heat, stirring constantly until it thickens into a glaze.
- Toss half of the thickened sauce with the shredded chicken and reserve the rest for serving.
- Serve hot with rice, vegetables, or in wraps.
