  • 2 cups powdered sugar (for frosting)
  • 12 teaspoons water or milk, as needed (for frosting)
  • Optional: additional cinnamon for sprinkling


Instructions

  1. In a large mixing bowl or stand mixer, beat together the softened butter, granulated sugar, brown sugar, and vanilla extract until light and creamy.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Add the gluten-free flour, baking powder, cinnamon, and salt. Mix until a dough forms without overmixing.
  4. Chill the dough in the refrigerator for 30 minutes to prevent spreading.
  5. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  6. Form the dough into 12 evenly sized balls (about 2 inches each). Flatten gently with your palm.
  7. Bake for 8–9 minutes, or until the edges are just set. Cookies should be soft in the center.
  8. Transfer cookies to a wire rack to cool completely.
  9. Meanwhile, prepare the frosting: Beat cream cheese, butter, and vanilla until smooth. Gradually add powdered sugar and beat until thick. Thin with milk or water if needed.
  10. Once cookies are cool, frost each cookie and sprinkle with extra cinnamon if desired.
