- ¾ cup (170g) unsalted butter, softened
- 1 cup (200g) brown sugar, packed
- 1 large egg
- ¼ cup (60ml) molasses
- 2 tsp vanilla extract
- ½ cup (60g) powdered sugar, for coating
Instructions
- In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
- In a large bowl, beat the softened butter and brown sugar together until light and fluffy, about 2-3 minutes. Add the egg, molasses, and vanilla extract and beat until fully combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Cover the dough with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the oven to 350°F (180°C). Line two baking sheets with parchment paper or silicone mats.
- Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball generously in powdered sugar until fully coated.
- Place the dough balls 2 inches apart on the prepared baking sheets. Bake for 10-12 minutes, or until the edges are firm and the tops are cracked. The cookies should still be soft in the center.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
