Description

Sourdough Pumpkin Bars with Cinnamon Cream Cheese Frosting combine the tang of sourdough with the richness of pumpkin and warm spices, topped with a creamy cinnamon frosting. They are perfect for fall gatherings, offering a unique twist on traditional pumpkin bars.

Ingredients

Scale
  • 1 cup Sourdough Starter
  • 1 cup Pumpkin Puree
  • 1 1/2 cups All-Purpose Flour
  • 1 cup Sugar
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 2 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 2 large Eggs
  • 1/2 cup Vegetable Oil
  • 1 tsp Vanilla Extract
  • 8 oz Cream Cheese, softened
  • 1/4 cup Butter, softened
  • 2 cups Powdered Sugar
  • 1 tsp Ground Cinnamon (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. In a large bowl, whisk together the sourdough starter, pumpkin puree, eggs, sugar, vegetable oil, and vanilla extract.
  3. In a separate bowl, whisk the flour, baking powder, baking soda, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool completely in the pan on a wire rack.
  8. For the frosting, beat the cream cheese, butter, powdered sugar, and cinnamon until smooth and creamy.
  9. Spread the frosting evenly over the cooled pumpkin bars.
  10. Slice into squares and serve.

Notes

  • Ensure the bars are completely cool before frosting to prevent the frosting from melting.
  • Store leftovers in an airtight container in the fridge for up to a week.
  • If desired, you can add chopped nuts like pecans or walnuts to the batter for extra texture.
  • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
