- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon ground cumin

- Salt and pepper to taste
- Wooden or metal skewers (if using wooden, soak in water for 30 minutes)
- 1 cup fresh parsley, finely chopped
- 1/2 cup fresh cilantro, finely chopped
- 4 cloves garlic, minced
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- In a large bowl, combine 2 tablespoons olive oil, 2 cloves minced garlic, 1 teaspoon paprika, 1 teaspoon ground cumin, 1/2 teaspoon cayenne pepper, 1 teaspoon dried oregano, salt, and pepper.
- Add the beef cubes and toss well to coat. Cover and refrigerate for at least 30 minutes, preferably 1–2 hours.
- While the beef marinates, prepare the chimichurri sauce by mixing 1 cup chopped parsley, 1/2 cup chopped cilantro, 4 cloves minced garlic, 1/2 cup olive oil, 2 tablespoons red wine vinegar, 1 tablespoon lemon juice, 1 teaspoon dried oregano, 1/2 teaspoon red pepper flakes, salt, and pepper in a bowl. Stir well and refrigerate until ready to use.
- Preheat the grill to medium-high heat.
- Thread the marinated beef onto the soaked skewers.
- Grill skewers for 2–3 minutes per side, or until the beef is cooked to your desired doneness.
- Remove from grill and let rest for a few minutes.
- Serve skewers drizzled with chimichurri sauce, with extra sauce on the side.
