Description

Ingredients

  • Spinach (2 cups, fresh)
  • Feta Cheese (1/2 cup, crumbled)
  • Tortillas (4, medium-sized)
  • Olive Oil (2 tbsp)
  • Garlic (2 cloves, minced)
  • Onion (1 small, chopped)
  • Fresh Parsley (optional, 1 tbsp, chopped)


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onions and minced garlic, and sauté until the onions are soft and translucent.
  2. Add the fresh spinach to the skillet, stirring constantly until the spinach is wilted and the excess moisture has evaporated.
  3. Remove the skillet from the heat and stir in crumbled feta cheese. The heat from the spinach will help melt the feta and bring everything together.
  4. Place a tortilla on a flat surface. Spoon the spinach and feta mixture onto one half of the tortilla, then fold the other half over to cover the filling.
  5. Heat a non-stick skillet over medium heat. Place the quesadilla on the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden and crispy, and the cheese is melted.
  6. Slice the quesadilla into wedges and serve hot, with your favorite dipping sauce, like salsa or sour cream.
