Ingredients
- Spinach (2 cups, fresh)
- Feta Cheese (1/2 cup, crumbled)
- Tortillas (4, medium-sized)
- Olive Oil (2 tbsp)
- Garlic (2 cloves, minced)
- Onion (1 small, chopped)
- Fresh Parsley (optional, 1 tbsp, chopped)
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onions and minced garlic, and sauté until the onions are soft and translucent.
- Add the fresh spinach to the skillet, stirring constantly until the spinach is wilted and the excess moisture has evaporated.
- Remove the skillet from the heat and stir in crumbled feta cheese. The heat from the spinach will help melt the feta and bring everything together.
- Place a tortilla on a flat surface. Spoon the spinach and feta mixture onto one half of the tortilla, then fold the other half over to cover the filling.
- Heat a non-stick skillet over medium heat. Place the quesadilla on the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden and crispy, and the cheese is melted.
- Slice the quesadilla into wedges and serve hot, with your favorite dipping sauce, like salsa or sour cream.
