Description

St Patrick’s Day Brownie Trifle is a festive layered dessert made with fudgy chocolate brownies, creamy green vanilla pudding, fluffy whipped topping, and crushed mint Oreo cookies. This easy make-ahead dessert is perfect for holiday parties and delivers a rich mint chocolate flavor in every spoonful.

Ingredients

Scale
  • 1 (18.3 oz) box brownie mix (for 8×8-inch pan)
  • 2 large eggs (as required for brownie mix)
  • 1/2 cup vegetable oil (as required for brownie mix)
  • 3 tablespoons water (as required for brownie mix)
  • 1 (3.5 oz) box instant vanilla pudding mix
  • 2 cups cold milk (for pudding preparation)
  • 8 oz whipped topping (such as Cool Whip)
  • 45 drops green food coloring
  • 12 mint Oreo cookies, crushed

Instructions

  1. Preheat oven and prepare the brownie batter according to package directions using eggs, oil, and water. Pour into an 8×8-inch pan and bake as directed. Allow brownies to cool completely.
  2. In a mixing bowl, whisk together the instant vanilla pudding mix and 2 cups cold milk for about 2 minutes until thickened.
  3. Add 4–5 drops of green food coloring to the pudding and stir until evenly colored. Adjust color as desired.
  4. Crush 12 mint Oreo cookies into small chunks using a sealed plastic bag and rolling pin.
  5. Cut the cooled brownies into bite-sized cubes.
  6. In a clear trifle bowl, add a layer of brownie cubes to the bottom.
  7. Spread a layer of green pudding evenly over the brownies.
  8. Add a layer of whipped topping over the pudding.
  9. Repeat layers with remaining brownies, pudding, and whipped topping.
  10. Top with crushed mint Oreo cookies.
  11. Refrigerate for at least 1 hour before serving to allow flavors to blend.

Notes

  • Brownies must be fully cooled before layering to prevent melting the pudding and whipped topping.
  • This dessert can be assembled up to 24 hours in advance.
  • Store covered in the refrigerator for up to 3 days.
  • For a natural green color, substitute pistachio pudding for vanilla pudding and omit food coloring.
  • For stronger mint flavor, add 1/4 teaspoon mint extract to the pudding mixture.
