Description

Soft and chewy St Patrick’s Day Cookies made with white cake mix, vibrant green coloring, and a sweet powdered sugar crinkle finish. These festive cookies are easy to prepare, perfect for holiday parties, and deliver a tender bakery-style texture with minimal effort.

Ingredients

Scale
  • 1 box (15.25 oz) white cake mix
  • 2 large eggs
  • 1/3 cup (80 ml) vegetable oil
  • 1 teaspoon green gel food coloring
  • 1/2 cup (60 g) powdered sugar (for rolling)
  • 1/2 cup (90 g) white chocolate chips (optional)
  • 2 tablespoons green sprinkles (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, combine the white cake mix, eggs, and vegetable oil. Stir until a thick, sticky dough forms.
  3. Add green food coloring and mix thoroughly until the dough reaches a vibrant green shade.
  4. Fold in white chocolate chips and green sprinkles if using.
  5. Scoop 1 tablespoon portions of dough and roll into balls.
  6. Roll each dough ball in powdered sugar until fully coated.
  7. Place dough balls 2 inches apart on prepared baking sheets.
  8. Bake for 8–11 minutes, until edges are set and centers remain slightly soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Do not overbake to maintain a soft and chewy texture.
  • Chill dough for 20–30 minutes if it feels too sticky to handle.
  • Use gel food coloring for a more vibrant green without thinning the dough.
  • Store cookies in an airtight container at room temperature for up to 4 days.
  • Dough balls can be frozen for up to 3 months and baked directly from frozen.
