Description

St Patrick’s Day Irish Soda Bread is a traditional no-yeast quick bread made with just four simple ingredients. With a golden crust and tender, hearty crumb, this rustic Irish loaf comes together in under 40 minutes and pairs perfectly with soups, stews, or a generous spread of butter and jam.

  • 3 2/3 cups (440g) all-purpose flour, plus up to 1 additional cup (120g) for adjusting dough consistency
  • 1 teaspoon kosher or sea salt
  • 1 teaspoon baking soda
  • 1 3/4 cups (420ml) buttermilk


Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the 3 2/3 cups all-purpose flour, salt, and baking soda until evenly combined.
  3. Create a well in the center of the dry ingredients and pour in the 1 3/4 cups buttermilk.
  4. Mix with a wooden spoon or paddle attachment until a soft dough forms. The dough should be fairly wet but not sticky. If too wet, add additional flour in 1/4 cup (30g) increments, up to 1 cup total.
  5. Turn the dough onto a lightly floured surface and gently knead 3 to 4 times, just until smooth. Do not overwork the dough.
  6. Shape the dough into a flat round loaf about 1 to 2 inches thick.
  7. Place the loaf onto the prepared baking sheet and cut a deep cross across the top from edge to edge using a sharp knife.
  8. Bake for 25 to 30 minutes, or until the crust is golden brown and the loaf sounds hollow when tapped on the bottom.
  9. Allow the bread to cool slightly before slicing and serving.

Notes

  • Measure flour using the spoon-and-level method to avoid adding too much.
  • If you do not have buttermilk, mix 1 3/4 tablespoons vinegar with enough milk to reach 1 3/4 cups and let sit for 5 minutes.
  • Do not over-knead, as this can result in dense bread.
  • Store wrapped at room temperature for up to 2 days or freeze sliced for longer storage.
