Instructions

  1. Preheat the oven to 350°F (175°C) and grease and line the bottom of a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, lemon juice, and lemon zest until well combined.
  5. Alternately add the flour mixture and buttermilk into the butter mixture, mixing well after each addition. Be careful not to overmix.
