Ingredients
Scale
- 8 oz elbow macaroni
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups whole milk
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
Instructions
- Bring a large pot of salted water to a boil. Add the 8 oz elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
- In a medium saucepan over medium heat, melt 1/4 cup butter until fully melted.
- Whisk in 1/4 cup all-purpose flour and cook for about 1 minute until the mixture becomes lightly golden and smooth.
- Slowly pour in 2 cups milk while whisking constantly to prevent lumps. Continue whisking and cook for about 4–5 minutes until the sauce thickens.
- Reduce the heat to low and add 2 cups shredded cheddar cheese, 1 cup shredded mozzarella cheese, and 1/2 cup grated Parmesan cheese.
- Stir continuously until the cheeses fully melt and the sauce becomes smooth and creamy.
- Season the sauce with 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1/4 teaspoon paprika, and 1/4 teaspoon garlic powder. Mix well.
- Add the cooked macaroni to the cheese sauce and stir until all the pasta is evenly coated.
- Cook for another 1 minute on low heat, then serve immediately while hot and creamy.
Notes
- Always shred cheese from a block for smoother melting and a creamier sauce.
- If the cheese sauce becomes too thick, stir in a small splash of warm milk to loosen it.
- Keep the heat low when adding cheese to prevent the sauce from becoming grainy.
- Add cooked bacon, ham, or roasted vegetables to make the dish more filling.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
