Description

Strawberry Milkshake Cookies are soft, chewy cake mix cookies bursting with sweet strawberry flavor and creamy white chocolate chips. Inspired by the nostalgic taste of a classic strawberry milkshake, these vibrant pink cookies are quick to make and perfect for holidays, parties, or an easy everyday dessert.

Ingredients

Scale
  • 1 (15.25 oz) box strawberry cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cornstarch
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly spray with non-stick cooking spray.
  2. In a small bowl, whisk together the eggs, vegetable oil, and vanilla extract until smooth.
  3. In a large mixing bowl, combine the strawberry cake mix, baking powder, and cornstarch until evenly blended.
  4. Pour the wet ingredients into the dry ingredients and mix until no lumps remain and a thick dough forms.
  5. Fold in the white chocolate chips until evenly distributed throughout the dough.
  6. For best results, refrigerate the dough for 1 hour to prevent spreading.
  7. Roll dough into 1-inch balls and place on the prepared baking sheet. Gently flatten each ball slightly with your palm.
  8. Bake for 10 minutes, or until the edges are set and the centers remain soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Chilling the dough helps create thicker, chewier cookies.
  • Do not overbake; cookies will continue to firm up as they cool.
  • You can substitute melted butter for vegetable oil for a richer flavor.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • Dough balls can be frozen and baked directly from frozen, adding 1–2 extra minutes to the baking time.
