Description

  • 1/2 cup plain breadcrumbs
  • 2 large eggs, lightly beaten

  • 2 tablespoons olive oil, divided
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1/4 cup sour cream


Instructions

  1. In a large mixing bowl, combine the ground beef, Worcestershire sauce, breadcrumbs, eggs, onion powder, salt, and pepper. Mix until just combined.
  2. Using a 1-tablespoon cookie scoop, portion the meat mixture and roll into balls.
  3. Heat a skillet over medium-high heat. Add 1 tablespoon olive oil and brown the meatballs on all sides. Transfer browned meatballs to the slow cooker.
  4. Add the remaining olive oil to the skillet and heat. Melt the butter, then whisk in the flour. Cook for about 2 minutes.
  5. Slowly add the beef broth, whisking constantly until the gravy thickens.
  6. Remove from heat and stir in the sour cream. Pour the gravy over the meatballs in the slow cooker.
  7. Cover and cook on low for 4 hours or high for 2 hours. Serve the meatballs over egg noodles, mashed potatoes, or vegetables.

Notes

  • If you’re short on time, you can skip browning the meatballs. Simply place raw meatballs in the Crockpot and cook as directed.
  • For a gluten-free version, use gluten-free breadcrumbs.
  • If you prefer a lighter option, you can substitute ground turkey or chicken for the beef.
