Description

Sweet Potato Casserole is a creamy, comforting side dish made with mashed sweet potatoes, butter, sugar, and eggs, topped with a crunchy brown sugar streusel. It’s a perfect addition to holiday dinners and gatherings, offering a rich balance of sweet and savory flavors.

Ingredients

Scale
  • 3 lbs. Sweet Potatoes (about 5-6 medium)
  • 6 Tablespoons Butter (melted)
  • 1/2 cup Sugar
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 teaspoon Cinnamon
  • 1 teaspoon Salt
  • 1/4 cup Half-n-Half
  • 3 Tablespoons Salted Butter (for topping)
  • 1 cup Brown Sugar
  • 1/3 cup Flour

Instructions

  1. Preheat the oven to 400°F. Pierce the sweet potatoes with a fork and bake for 45 minutes to 1 hour, until soft.
  2. Let the sweet potatoes cool slightly, then scoop out the flesh and place it in a large mixing bowl.
  3. Add melted butter, sugar, eggs, vanilla extract, cinnamon, salt, and half-n-half to the mashed sweet potatoes. Whip everything together until smooth and creamy.
  4. Transfer the mashed sweet potatoes to a 9×13 baking dish and spread evenly.
  5. For the streusel topping, mix softened butter, brown sugar, and flour until coarse crumbs form.
  6. Sprinkle the brown sugar topping evenly over the mashed sweet potatoes.
  7. Bake at 350°F for 20-25 minutes, until the casserole is heated through and the topping is golden brown.
  8. If desired, add marshmallows during the last few minutes of baking and bake until golden.
  9. Serve warm and enjoy!

Notes

  • For a smoother texture, use a hand mixer when whipping the sweet potatoes.
  • If you want a crunchier topping, add chopped pecans to the streusel mixture.
  • This casserole can be made ahead by preparing it up to 48 hours in advance. Just refrigerate and bake before serving.
  • If you prefer to use canned sweet potatoes, reduce the sugar in the mashed sweet potatoes to 1/4 cup to account for the syrup in the can.
