- 6 Tablespoons Butter (melted)
- 1/2 cup Sugar
- 2 large Eggs

- 1/4 cup Half-n-Half
- 3 Tablespoons Salted Butter (for topping)
- 1 cup Brown Sugar
- 1/3 cup Flour
Instructions
- Preheat the oven to 400°F. Pierce the sweet potatoes with a fork and bake for 45 minutes to 1 hour, until soft.
- Let the sweet potatoes cool slightly, then scoop out the flesh and place it in a large mixing bowl.
- Add melted butter, sugar, eggs, vanilla extract, cinnamon, salt, and half-n-half to the mashed sweet potatoes. Whip everything together until smooth and creamy.
- Transfer the mashed sweet potatoes to a 9×13 baking dish and spread evenly.
- For the streusel topping, mix softened butter, brown sugar, and flour until coarse crumbs form.
- Sprinkle the brown sugar topping evenly over the mashed sweet potatoes.
- Bake at 350°F for 20-25 minutes, until the casserole is heated through and the topping is golden brown.
- If desired, add marshmallows during the last few minutes of baking and bake until golden.
- Serve warm and enjoy!

- For a smoother texture, use a hand mixer when whipping the sweet potatoes.
- If you want a crunchier topping, add chopped pecans to the streusel mixture.
