Description

This Tater Tot Breakfast Casserole is the ultimate make-ahead breakfast packed with crispy bacon, melty cheddar cheese, creamy eggs, and golden tater tots. With just 6 ingredients, it’s the perfect hearty dish for brunch, holidays, or any meal of the day.

Ingredients

Scale
  • 2 lb bacon: provides a smoky, savory flavor and crispy texture
  • 1 (30–32 oz) bag frozen tater tots: adds a crispy potato base and satisfying bite
  • 1 (1 oz) packet ranch dressing mix: infuses the eggs with herby, tangy flavor
  • 2 cups shredded cheddar cheese: melts to add rich, gooey texture and sharp flavor
  • 8 large eggs: binds the casserole and creates a fluffy base
  • 2 cups milk: balances the eggs for a creamy, smooth texture

Instructions

  1. Preheat oven to 350ºF and lightly grease a 9×13-inch baking dish with cooking spray.
  2. In a large skillet over medium heat, cook the bacon until crispy. Remove and chop into bite-sized pieces.
  3. In a large mixing bowl, combine frozen tater tots, chopped bacon, and shredded cheddar cheese. Toss well to mix.
  4. Spread the tater tot mixture evenly into the prepared baking dish.
  5. In a separate bowl, whisk together eggs, ranch dressing mix, and milk until fully combined.
  6. Pour the egg mixture evenly over the tater tot mixture in the baking dish.
  7. Bake uncovered for 50–60 minutes or until eggs are set and the top is golden brown.
  8. Remove from oven and let sit for 5–10 minutes before serving.

Notes

  • You can substitute turkey bacon for a lighter version.
  • Use frozen tater tots directly from the bag — no need to thaw.
  • This casserole can be assembled the night before and refrigerated until ready to bake.
  • To freeze, wrap tightly and thaw completely before baking.
  • Let the casserole rest before cutting to allow for cleaner slices.
