This easy Tater Tot Sausage Breakfast Casserole is a make-ahead, hearty dish perfect for beginners and ideal for breakfast, brunch, or dinner.

- 2 lb hot breakfast sausage
- 1 (30–32 oz) bag frozen tater tots
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup mozzarella cheese
- 8 eggs
- 2 cups milk
Instructions
- Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook the sausage until no longer pink. Drain the fat and set aside.
- In a large bowl, combine the frozen tater tots, cooked sausage, cheddar cheese, and mozzarella. Mix gently and transfer to the prepared baking dish.
- In another bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until smooth and slightly frothy.
- Pour the egg mixture evenly over the sausage and tater tot mixture.
- Bake uncovered for 60–70 minutes, or until the center is set and the top is golden brown. Let it rest for 5–10 minutes before serving.
Notes
- You can assemble the casserole a day ahead and refrigerate overnight before baking.
- To freeze, wrap tightly before baking and thaw completely before cooking.
- If baking from the fridge, add an extra 5–10 minutes to the cooking time.
- Tent with foil during baking if the top browns too quickly.
