Description

This easy Tater Tot Sausage Breakfast Casserole is a make-ahead, hearty dish perfect for beginners and ideal for breakfast, brunch, or dinner.


Ingredients

  • 2 lb hot breakfast sausage
  • 1 (30–32 oz) bag frozen tater tots
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 8 eggs
  • 2 cups milk


Instructions

  1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the sausage until no longer pink. Drain the fat and set aside.
  3. In a large bowl, combine the frozen tater tots, cooked sausage, cheddar cheese, and mozzarella. Mix gently and transfer to the prepared baking dish.
  4. In another bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until smooth and slightly frothy.
  5. Pour the egg mixture evenly over the sausage and tater tot mixture.
  6. Bake uncovered for 60–70 minutes, or until the center is set and the top is golden brown. Let it rest for 5–10 minutes before serving.

Notes

  • You can assemble the casserole a day ahead and refrigerate overnight before baking.
  • To freeze, wrap tightly before baking and thaw completely before cooking.
  • If baking from the fridge, add an extra 5–10 minutes to the cooking time.
  • Tent with foil during baking if the top browns too quickly.
