- 1½–2 lb boneless skinless chicken breasts
- ½ cup Italian dressing
- 1 tbsp avocado oil
- 1 tbsp butter
- 10 oz cremini mushrooms, sliced
- ½ cup yellow onion, sliced
- 2 tbsp water
- ¼ tsp white pepper
- ¼ tsp black pepper
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ½ tsp salt
- 2 oz Monterey Jack cheese, sliced
Instructions
- Tenderize chicken using a fork or jacquard tool and marinate in Italian dressing for 2–24 hours.
- Preheat oven to 400°F. Heat skillet over medium-high heat and add oil.
- Sear chicken breasts for 5 minutes on each side. Remove from pan.
- Reduce heat to medium and add butter. Sauté mushrooms and onions for 7 minutes.
- Add water and scrape pan to deglaze. Stir in all spices.
- Return chicken to skillet and spoon vegetables on top.
- Top with cheese and transfer skillet to oven.
- Bake for 10 minutes until chicken is cooked through and cheese is melted and slightly browned.
- Let rest for 5 minutes before serving.
Notes
- For deeper flavor, marinate chicken overnight.
- Use cast iron for best sear and even cooking.
- Substitute mozzarella or provolone if Monterey Jack is unavailable.
- This dish is naturally gluten-free if you verify all ingredients.
