Description

Juicy, tender chicken breasts smothered in sautéed mushrooms, onions, and melted Monterey Jack cheese. This easy Texas Roadhouse Smothered Chicken copycat is a one-skillet comfort food favorite perfect for weeknights.


Ingredients

  • 2 lb boneless skinless chicken breasts
  • ½ cup Italian dressing
  • 1 tbsp avocado oil
  • 1 tbsp butter
  • 10 oz cremini mushrooms, sliced
  • ½ cup yellow onion, sliced
  • 2 tbsp water
  • ¼ tsp white pepper
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ½ tsp salt
  • 2 oz Monterey Jack cheese, sliced

Instructions

  1. Tenderize chicken using a fork or jacquard tool and marinate in Italian dressing for 2–24 hours.
  2. Preheat oven to 400°F. Heat skillet over medium-high heat and add oil.
  3. Sear chicken breasts for 5 minutes on each side. Remove from pan.
  4. Reduce heat to medium and add butter. Sauté mushrooms and onions for 7 minutes.
  5. Add water and scrape pan to deglaze. Stir in all spices.
  6. Return chicken to skillet and spoon vegetables on top.
  7. Top with cheese and transfer skillet to oven.
  8. Bake for 10 minutes until chicken is cooked through and cheese is melted and slightly browned.
  9. Let rest for 5 minutes before serving.

  • For deeper flavor, marinate chicken overnight.
  • Use cast iron for best sear and even cooking.
  • Substitute mozzarella or provolone if Monterey Jack is unavailable.
