  • 80g icing sugar: Sweetens the mascarpone without graininess
  • 2 tbsp cocoa powder (for dusting): Adds a classic tiramisu finish


Instructions

  1. Preheat oven to 180°C (350°F). Line an 8×8 inch baking pan with parchment paper.
  2. Melt butter in a microwave-safe bowl or saucepan. Let it cool slightly.
  3. Whisk melted butter with caster sugar in a large bowl until combined and pale.
  4. Beat in the eggs one at a time, then add vanilla extract.
  5. Sift in the flour and cocoa powder, then fold gently until just combined.
  6. Pour the brownie batter into the prepared pan, spreading it evenly.
  7. Bake for 18–20 minutes or until a skewer comes out with moist crumbs.
  8. Let the brownies cool completely in the pan.
  9. Dissolve instant coffee in 1 tbsp hot water. Let it cool.
  10. In another bowl, beat mascarpone with icing sugar and the cooled coffee until smooth.
  11. Spread the mascarpone topping evenly over the cooled brownies.
  12. Dust with cocoa powder using a fine mesh sieve.
  13. Chill in the fridge for at least 1 hour before slicing and serving.
