Instructions
- Preheat oven to 180°C (350°F). Line an 8×8 inch baking pan with parchment paper.
- Melt butter in a microwave-safe bowl or saucepan. Let it cool slightly.
- Whisk melted butter with caster sugar in a large bowl until combined and pale.
- Beat in the eggs one at a time, then add vanilla extract.
- Sift in the flour and cocoa powder, then fold gently until just combined.
- Pour the brownie batter into the prepared pan, spreading it evenly.
- Bake for 18–20 minutes or until a skewer comes out with moist crumbs.
- Let the brownies cool completely in the pan.
- Dissolve instant coffee in 1 tbsp hot water. Let it cool.
- In another bowl, beat mascarpone with icing sugar and the cooled coffee until smooth.
- Spread the mascarpone topping evenly over the cooled brownies.
- Dust with cocoa powder using a fine mesh sieve.
- Chill in the fridge for at least 1 hour before slicing and serving.
