- 10 oz package cheese tortellini
- 10 oz cherry tomatoes
- 5 oz salami
- 1 cup Italian dressing
- 8 oz pearl or cherry-sized fresh mozzarella
Instructions
- Cook the tortellini according to the package instructions (about 3 minutes). Drain and rinse with cold water to cool.
- Transfer the cooled tortellini into a large Tupperware container and drizzle with ½ cup Italian dressing. Toss to coat.
- If there’s room, add the cherry tomatoes, salami, and mozzarella into the same container. If not, use a separate container. Drizzle with the remaining dressing.
- Cover and refrigerate for at least an hour or up to overnight to allow the flavors to meld.
- To assemble the skewers, alternate adding tortellini, cherry tomatoes, folded salami, and mozzarella onto each skewer. Repeat until all ingredients are used.
- Serve immediately or refrigerate until ready to serve.
Notes
- Feel free to make the skewers ahead of time and refrigerate them for up to 24 hours.
- If you run out of any ingredients (such as cheese or salami), continue making the skewers with what’s left.
- For a vegetarian option, skip the salami and add more vegetables like bell peppers or olives.
- Store leftovers in an airtight container for up to 2 days in the refrigerator.
