This indulgent bakery-style treat is perfect for breakfast, brunch, or dessert and delivers deep chocolate flavor in every gooey swirl.

Ingredients

Scale
  • 3 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon salt
  • 1 cup whole milk, warmed
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon ground cinnamon
  • 1/2 cup mini chocolate chips
  • 1/2 cup chopped dark chocolate
  • 1 cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder (for glaze)
  • 2 to 3 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl whisk together 3 1/2 cups all-purpose flour, 1/4 cup granulated sugar, 2 1/4 teaspoons instant yeast, and 1 teaspoon salt.
  2. Add 1 cup warmed milk, 1/4 cup melted unsalted butter, and 1 large egg. Mix until a soft dough forms.
  3. Knead the dough on a lightly floured surface for 5 to 7 minutes until smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour until doubled in size.
  5. In a small bowl mix 1/2 cup softened butter, 1/2 cup packed brown sugar, 2 tablespoons cocoa powder, and 1 teaspoon ground cinnamon to create the filling.
  6. Punch down the risen dough and roll it into a rectangle about 1/4 inch thick on a floured surface.
  7. Spread the chocolate filling evenly over the dough, then sprinkle with 1/2 cup mini chocolate chips and 1/2 cup chopped dark chocolate.
  8. Roll the dough tightly from the long edge into a log and slice it into 12 equal rolls.
  9. Place the rolls in a greased 9×13-inch baking dish, cover, and let rise for another 30 minutes.
  10. Preheat the oven to 350°F (175°C) and bake the rolls for 25 to 30 minutes until golden brown.
  11. Prepare the glaze by whisking together 1 cup powdered sugar, 2 tablespoons cocoa powder, 2 to 3 tablespoons milk, and 1/2 teaspoon vanilla extract until smooth.
  12. Let the rolls cool for about 10 minutes, then drizzle the chocolate glaze over the warm rolls before serving.

Notes

  • Ensure the milk is warm but not hot to properly activate the yeast.
  • Use high-quality dark chocolate for a richer flavor.
  • Dental floss can be used to slice the rolls cleanly without squishing the dough.
  • For extra gooey rolls, pour 1/4 cup warm heavy cream over the rolls before baking.
  • Store leftovers in an airtight container for up to 2 days at room temperature or 5 days in the refrigerator.
  • Reheat rolls in the microwave for 15–20 seconds to restore their soft texture.
