  • 1/3 cup mayonnaise
  • Juice of 1/2 lemon
  • 1/2 tsp crushed red pepper flakes (optional)
  • 2 (6-oz) cans tuna, drained
  • 1 rib celery, finely chopped
  • 2 dill pickles, finely chopped
  • 1/4 cup finely chopped red onion
  • 2 tbsp freshly chopped parsley
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 8 slices sourdough bread
  • 4 tbsp butter
  • 1 tomato, sliced
  • 8 slices cheddar cheese


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, whisk together mayonnaise, lemon juice, and crushed red pepper flakes (if using).
  3. Drain the tuna thoroughly and add it to the mayo mixture, breaking it into flakes.
  4. Add celery, pickles, red onion, and parsley. Toss to combine, and season with salt and pepper to taste.
  5. Butter one side of each bread slice and layer the unbuttered side with a portion of the tuna salad, 2–3 slices of tomato, and 2 slices of cheddar cheese.
  6. Top with another slice of bread, buttered side up, and repeat for the remaining sandwiches.
  7. Place the sandwiches on a baking sheet and bake for 5–8 minutes or until the cheese is melted and the bread is golden and crispy.
  8. Serve hot and enjoy the gooey, crispy delight of a perfect tuna melt!
