  • 1 large sweet potato (about 12 oz), cubed into 1-inch pieces
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1 tbsp granulated sugar
  • 1 cup frozen corn
  • Salt, to taste
  • Black pepper, to taste
  • Garnishes: 1/4 cup chopped cilantro, 1/3 cup shredded cheddar cheese, 2 sliced avocados


Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, sauté for 1-2 minutes until fragrant.
  2. Add ground turkey, breaking up any clumps. Season with salt and pepper, cooking until no longer pink.
  3. Stir in diced tomatoes, tomato sauce, chicken broth, cubed sweet potatoes, chili powder, smoked paprika, cumin, and sugar. Mix well.
  4. Bring to a boil, then reduce heat to medium. Simmer for about 15 minutes, or until sweet potatoes are tender.
  5. Add frozen corn, increase heat to medium-high, and cook for a few minutes until heated through and the liquid returns to a boil.
  6. Taste and adjust seasoning with salt and pepper as needed. Remove from heat.
  7. Serve hot, garnished with cilantro, cheese, avocado, or desired toppings.
