Description

A creamy and indulgent Vanilla Wafer Icebox Cake made with layers of vanilla wafers, white chocolate pudding, cream cheese, and whipped topping. This easy no-bake dessert sets in the refrigerator, creating a soft, cake-like texture perfect for any occasion.

  • 2 (3.4 oz each) packages white chocolate instant pudding mix
  • 2 1/2 cups cold milk
  • 12 ounces whipped topping, divided
  • 1 (11 oz) box vanilla wafers
  • 1 cup fresh strawberries, sliced
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 2 tablespoons fresh mint leaves (optional)


Instructions

  1. Spread 1/2 cup of whipped topping evenly on the bottom of a springform pan to create the base layer.
  2. In a large mixing bowl, beat the softened cream cheese and dry pudding mix until smooth.
  3. Gradually add the cold milk while mixing, and beat for about 2 minutes until the mixture thickens.
  4. Fold in the remaining whipped topping gently until fully combined and fluffy.
  5. Arrange a single layer of vanilla wafers over the whipped topping base.
  6. Spread about 3/4 cup of the pudding mixture evenly over the wafer layer.
  7. Repeat layering wafers and pudding mixture until all filling is used, ending with a cream layer on top.
  8. Cover and refrigerate for at least 4 hours or overnight for best results.
  9. Before serving, garnish with strawberries, blueberries, raspberries, and mint leaves if desired.
